What is makgeolli?

Makgeolli (막걸리) is a raw, minimally filtered rice-based alcohol. It’s sometimes referred to as Korean “rice wine”, but it’s really closer to a “rice beer” due to lower ABV levels. The flavor is bright, effervescent, and deeply connected to Korean culture—from kingdoms to Kpop. Throughout decades of imperialism, poverty, and war in its country of origin, makgeolli continues to thrive as a “drink of the people.” While makgeolli is the oldest alcoholic beverage in Korea, it is largely unknown and unavailable in Western markets.

What is nuruk?

Nuruk is a traditional fermentation starter used to produce Korean alcohols. It’s typically made using cereals such as wheat, barley, or rice, with various types of local mold and yeast encouraged to grow on it. Nuruk is the key ingredient and distinguishing factor when brewing Korean alcoholic beverages.

Basically, it’s a superstar moldy wheat cake.


What else do I need to start brewing makgeolli using the kit?

We’ve curated the hard stuff, but you’ll also need a few basic kitchen items. Beyond what’s provided, you’ll need something to cook the rice (rice cooker or pot), something to stir (spoon or hand), and somewhere to keep your finished brew (plastic or glass bottles).


At what temperature should I brew my makgeolli?

We recommend brewing at room temperature in a cool, dark space (eg: inside a cabinet). For a sweeter flavor, try brewing at a slightly cooler temperature (~65°F).


How much does the makgeolli kit produce in one batch?

What is the average ABV of makgeolli?

Makgeolli is traditionally 5-8% alcohol by volume. An undiluted brew (takju) can range from 15-20%.


How long does makgeolli last?

The consistency and flavor of your brew will develop as it ages. Based on our recipe, we recommend enjoying within the first 30 days. An undiluted brew will last several months in the fridge.


How is makgeolli best enjoyed?

You’ll notice that the precipitate settles, but it only takes a few strong swirls to reincorporate your brew. If you’re looking for a more carbonated brew, try adding a teaspoon of sugar when bottling. We think makgeolli is best enjoyed chilled and over good food and laughter, but for the technical foodie, take it from the Michelin Guide.

What’s in the sanitizing solution?

We use an acid based no-rinse sanitizer made from food-grade phosphoric acid. It’s already diluted, ready to use, and has an indefinite shelf life.


Is makgeolli gluten free?

Makgeolli can be gluten free, but it depends on what kind of nuruk is used to make it. Our kit currently includes a traditional wheat-based nuruk, which provides a more complex flavor profile. Please keep this in mind if you have any wheat allergies or gluten intolerance.
